There are several types of Khachapuri one might encounter throughout Georgia. There is Imeruli, Megruli, Guruli, Osuri, Svanuri, Rachuli, Penovani, etc. Each one of these are made in slightly different variations. Adjarian khachapuri will also remind you of Turkish Pide.

Imeretian (Imeruli) khachapuri is the most popular form, made with a yeast dough filled with white Imeretian salted cheese. Adjarian (Acharuli/Adjaruli), named for Adjara, a region of Georgia on the Black Sea, is a boat-shaped khachapuri, with cheese, butter, and an egg yolk in the middle.

Imeretian khachapuri is made out of yeast dough and fatty fresh cheese. They traditionally bake it on a clay pan. Megrelian Khachapuri is almost the same as Imeretian just it's topped with cheese and greased with eggs. Also, Megrelians do not always use fresh cheese.

Are khachapuri and Pide the same dish from different countries? Khachapuri is traditionally from Georgia, whereas Pide is Turkish. Pide often includes savory toppings, whereas khachapuri is strictly cheese, bread, and sometimes an egg.
